Ingredients for the dough:
1 cup all-purpose-flour | maida flour
A pinch of turmeric
A pinch of salt
1/2 cup water
2 tablespoon oil
Ingredients for the Filling:
250g sweet potatoes
1/4 cup fresh coconut
1 cup dates
1/2 teaspoon cardamom powder
Oil for cooking
Method:
In a large bowl, add flour, turmeric & salt.
Add water little by little and make a soft dough.
Next, add 1 tablespoon of oil and mix the dough well.
Again add 1 more tablespoon of oil and mix well.
Cover the dough and let it rest for 2 hours.
Meanwhile, add dates to a blender and blend smooth.
Next, boil sweet potatoes and let them cool down.
Peel the sweet potatoes and mash.
Add coconut, agreed dates, and cardamom powder to it.
Mix well, divide into 7 - 8 equal portions and roll them into balls.
Now, knead the dough and divide it into 7 - 8 pieces.
Take wax, parchment, butter, or a plastic cover.
Grease it with a few drops of oil.
Now place the dough and spread with your hand.
Place sweet potato mixture in the centre of the dough.
Now, cover the filling by joining all the sides to the centre.
Flatten it gently by pressing it with your fingers.
Roast holige on heated tawa.
Apply oil or ghee to roast.
